I’m Maury and this is Casa Lago Tasting Room, where I develop, cook, and photograph delicious food. First among those I feed is my partner Alicia. She is the better half of this blog and the taste tester of all the recipes I develop. I started this blog with the mission of making food that has meaning; that entertains not just the taste buds but also the mind. Sometimes that’s a literary meaning, a pun, or an inversion of the conventional (i.e black rice and white beans) that applies to our particular culture. Other times its exploratory, going to a new region and trying their food, and experiencing that, even if it’s just by recreating it at home- the same is true for Michelin star dishes that haven’t been tasted but still want to experience. That’s why I started this. To reach further than my current circumstances allow, and I hope the same for you!
To use food to travel beyond your circumstances.
For the last 10 years, I’ve been cooking as a private chef, developing skills and techniques and researching the luminaries of gastronomy, from Escoffier, to Ferran Adria, to Massimo Bottura and Julia Child. My foundation is in Classical French Cuisine, instilled when I attended Le Cordon Bleu. And while I love experimenting with different cuisines, my favorite dishes remain Mediterranean: Spanish, French, Italian, and Greek dishes that feature light, vibrant flavors, and simple preparations to showcase the quality of the ingredients.
Recently, Casa Lago Tasting Room launched a collaboration with Fairchild Tropical Botanical Garden, teaching classes and featuring plant forward recipes.
Beyond the website, Casa Lago takes physical form as a popup restaurant. On occasion, we develop a tasting menu and open it to the public. The goal of these popups is to transport you away from the everyday with the experience. Our team and I craft the theme, menu, and go the extra mile to deliver more than what a typical restaurant ever could. Check out our Instagram account and you’ll see what I’m talking about!

Living in Miami, Florida, I get to share our latest projects: including balcony gardening and rabbit watching. Our apartment is complete with
Phoebus, our resident rabbit who watches over the plants and gets rewarded with the occasional
carrot for his efforts.
