This Banana Bread Waffle recipe is wonderful for a comforting breakfast. Full of banana, chocolate, and coconut flavors, it’s crispy and drizzled with cardamom honey.Â

For the Banana Bread Batter
- 2 Bananas
- 2 Eggs
- 2 1/2 Teaspoon Baking Powder
- 1 1/2 Tablespoon Olive Oil
- 1 Cup Milk
- 1/4 Teaspoon Kosher Salt
- 1/4 Cup Oats
- 1 Cup Almond Flour
For The Cardamom Honey
- 1 Cup Honey
- 5–6 cracked Cardamom Pods
- Pinch of Kosher Salt (optional)
Instructions
For the Banana Bread Batter
- Combine in a bowl: eggs, vanilla extract, mashed bananas, and milk and olive oil. Combining all ingredients until an even mixture forms.Â
- In a separate bowl, combine oats, almond flour, and Baking Powder
- Combine dry ingredients into the wet bowl and whisk together to form an even mixture. Wait 3-4 minutes for the oats to absorb moisture and thicken the batter.Â
- Add 1/2 cup of the batter to the hot waffle iron.Â
- Add fillings (optional)
- Add another 1/2 cup of batter and close the lid.Â
- Cook for 5 minutes.Â
- Remove with a fork and set on a cooling rack to crisp up.Â
- I recommend serving with powdered sugar and butter, or cardamom honey, or vanilla whipped cream.Â
For the Cardamom Honey
- Toast cardamom pods in a pot until fragrant.Â
- Add 1 cup honey and simmer until it starts bubbling up.Â
- Cover and let infuse for at least 30 minutes. Remove the cardamom pods and set aside to serve.Â
Notes
Using Regular Flour:Â If you do not have almond flour, regular flour will be ok in the same amount.Â
Do not stack waffles when they are hot:Â The steam will make the edges soggy.Â
