Description

This Banana Bread Waffle recipe is wonderful for a comforting breakfast. Full of banana, chocolate, and coconut flavors, it’s crispy and drizzled with cardamom honey.

Ingredients

For the Banana Bread Batter

  • 2 Bananas
  • 2 Eggs
  • 2 1/2 Teaspoon Baking Powder
  • 1 1/2 Tablespoon Olive Oil
  • 1 Cup Milk
  • 1/4 Teaspoon Kosher Salt
  • 1/4 Cup Oats
  • 1 Cup Almond Flour

For The Cardamom Honey

  • 1 Cup Honey
  • 56 cracked Cardamom Pods
  • Pinch of Kosher Salt (optional)

Instructions

For the Banana Bread Batter

  1. Combine in a bowl: eggs, vanilla extract, mashed bananas, and milk and olive oil. Combining all ingredients until an even mixture forms. 
  2. In a separate bowl, combine oats, almond flour, and Baking Powder
  3. Combine dry ingredients into the wet bowl and whisk together to form an even mixture. Wait 3-4 minutes for the oats to absorb moisture and thicken the batter. 
  4. Add 1/2 cup of the batter to the hot waffle iron
  5. Add fillings (optional)
  6. Add another 1/2 cup of batter and close the lid. 
  7. Cook for 5 minutes. 
  8. Remove with a fork and set on a cooling rack to crisp up. 
  9. I recommend serving with powdered sugar and butter, or cardamom honey, or vanilla whipped cream. 

For the Cardamom Honey

  1. Toast cardamom pods in a pot until fragrant. 
  2. Add 1 cup honey and simmer until it starts bubbling up. 
  3. Cover and let infuse for at least 30 minutes. Remove the cardamom pods and set aside to serve. 

Notes

Using Regular Flour: If you do not have almond flour, regular flour will be ok in the same amount. 

Do not stack waffles when they are hot: The steam will make the edges soggy.
