Lemon Chicken Angel Hair Alfredo is the mouthful it should be! You get thyme, lemon, creamy alfredo sauce (mushrooms optional) and tender juicy chicken thighs cooked in the same pot. Alicia is big on pasta. Carbs are a girl’s best friend! And so, this recipe has moved from casual dinner (kay), to stay at home date night (yass!)
Between the trips to Miami and Jacksonville FL, Alicia and I have developed these moments that have grown to mean a lot to me. As I prepare to leave, we make time to have a meal together. It doesn’t normally matter what it is, though good pasta is heavily encouraged! (wink wink kinda thing). And we’ve gone through the list: Grilled Chicken and Buttered Angel Hair Pasta is outstanding, but this time we went with Lemon Chicken Angel Hair Alfredo.
The Story
We just arrived home from the hospital where her dad was getting treatment, both of us tired and dreading the separation (two weeks feels like an eternity when you’re in love), and we both needed lunch. The pasta date night we were supposed to have the night before got cancelled due to an emergency. But there’s no time like the present! So we cooked this together, laughed about the spills in the kitchen, “a watched pot never boils” is not a common practice at our house!
We shared a great meal because we were together. And the girl loves carbs so watching her eyes light up is a treat in itself.
Cooking Notes:
Lemon Chicken Alfredo is super easy to make! Start with butter and caramelize the onions. In a pan over medium heat melt the butter and add the onions until translucent. Keep stirring, the onions will brown and caramelize, developing their natural sugars. The Food Network has a good video how to caramelize onions.
At this stage you can add mushrooms in there too so their flavors can develop together. Though this step is entirely optional. Add thyme, and the Alfredo Sauce. I used store bought to save time this trip, if its too thick or salty, you can lighten it with some milk. Just add and mix until it’s a lighter consistency.
Season chicken with salt and pepper, I used chicken thighs because they cook fast and retain their juiciness very well. In another pan, sear the chicken with oil, two minutes on each side and add to the pan with the sauce. This will keep them cooking together.
Add cooked angel hair and garnish with lemon zest. The lemon zest is best taken with a microplane as it avoids any bitter pith.

Ingredients
- 4 chicken thighs
- 2 onions julienned
- 1 cup mushrooms sliced
- Salt and Pepper
- Paprika
- Thyme sprigs
- 1 lemon
- 2 cups Angel Hair Pasta
- 1 Cup Alfredo Sauce
- 1 Cup Milk
- 1 tbsp butter
Instructions
- Caramelize onions and mushrooms together until the onions are sweet and browned.
- Add Thyme, Alfredo Sauce and Milk to the pan. Mix together
- Season chicken thighs with paprika, salt and pepper
- In a separate pan cook chicken on high for two minutes on each side. Add to sauce.
- Cook angel hair pasta until Al Dente in a separate pot. Add to sauce and mix.
- Serve immediately and garnish with lemon zest.
