And it takes less than 10 minutes to make.
Reasoning & what you can expect
Life has been crazy these past few days, we’ve been involved with a major client event and have slept 10 hours in the last 96, even then, I had to share this recipe with you through the short breaks we’ve had.
Its a great way to take in more beta carotene and add more vegetables to your diet. The really cool thing is that it goes great with pita chips as well as adding it to a salad. Its a really versatile dish that has a lot of flavor and works with almost everything else you pair it with.
For the past few weeks, I’ve been experimenting with different versions of Hummus. I’m a visual guy, so for something like this, the different colors just catch my imagination! For this carrot hummus, the color is excellent, and the sweetness that comes from the carrots really pairs well with the garlic and tahini. Something very similar happened with the Beet Hummus I published last week.
Its really cool to see a dish have different colors and subtle flavor nuances as you taste it, where you can pick the flavor that stands out and gives it such unique characteristics.
How it’s done
The trick is to get the carrots simmered in water until fork tender. I’ve seen other recipes do this with raw carrots, but I believe the flavors wont meld as well together- and unless you have aĀ veryĀ high powered food processor, you’re going to get a grainy product at the end, or worse, have chunks of raw carrot.
Cooking them until fork tender takes care of that graininess and gives you a smooth texture.
Variations
Carrots work well with almost everything, try adding turmeric, and paprika for a more middle eastern flavor.
For an indian variation, some garam masala and curry powder makes this work well.

Ingredients
2 cups carrots chopped and boiled
4 cloves garlic
1 cup olive oil
2 tbsp tahini
3 tbsp lemon juice
Instructions
Boil the carrots in water until they are fork tender. Transfer the carrots to a food processor and add garlic, tahini, olive oil, and puree until a smooth consistency. Season with salt and pepper, and add the lemon juice.
