Pork Tacos with Goat Cheese Crema is this tangy fresh take on street tacos. It’s unpretentious, yet elegant as the flavors hit several notes while you’re eating them.
It’s a leftover kind of meal, where you throw whatever you have in the fridge, and it works well! But to me, tacos are one of those dishes are you can never have enough of. No matter what season or occasion, tacos are always a good idea.
Flavor profile
- Goat cheese, honey, and mint take the taco to the mediterranean. I added honey to the crema to balance out the goat cheese. The sweetness from the honey, tanginess from the goat cheese, and fresh herbs together with greek yogurt make this savory trifecta that marries well with the pork.
- It works well together because pork and this crema balance each other out, the pork does not need to marinate or pick up a bunch of other flavors, its a textural backdrop to the crema.
- Sauteed cabbage in apple cider vinegar and soy sauce add an umami flavor component and bring depth to the taco. Plays together with meats too.
- Secret: Cashews! Crushed, and sprinkled over the tacos add a crunch that makes every bite seriously worthy of your attention!
This is the kind of dish that you can make for a party, or as dinner for two and keep things simple. I made this for Alicia a weekend between holidays, where you have so many leftovers and we didn’t feel like eating the same dish for the third night in a row.
BTW it works great for tex mex turkey tacos too! (Hint hint Thanksgiving!)
I feel like you only eat tacos at a mexican restaurant (duh!) but they for the most part have the same traditional toppings: cheese, lettuce, pico de gallo, and the occasional beans. I haven’t seen much progress from that approach in any menu that served tacos. This is a little off the beaten path, but the tortilla can be a canvas for whatever you put in it, and at the time of its creation, that was the purpose of a taco, put leftover carnitas for eating more.
So give these a try or use them as inspiration to make your own. And trust me on the cashews!

Ingredients
12 corn tortillas
For the filling
8 oz pork cubed
8 oz bacon chopped
2 onions sliced thin
3 garlic cloves slivered
8 oz cabbage sliced
2 tbsp soy sauce
2 tbsp honey
4 oz crushed cashews
For the Goat Cheese Crema
4 tbsp greek yogurt
Mint sprigs
lemon zest
olive oil
1 tbsp honey
Instructions
For the filling
Saute bacon, onions, and garlic together until the onions are translucent. Add the pork and sear. Add cabbage and stir until the oil coats the cabbage. Add soy sauce and honey, let it reduce. Set aside.
For the Goat Cheese Crema
In a bowl, add the yogurt, goat cheese, honey and olive oil. Stir until it’s all mixed together. Add chopped mint and top the tacos.
Top with grated lemon zest
Notes
Leave the goat cheese to room temperature before adding it to the crema so its easier to mix together.
