It’s perfect for the season and inspired by raw preparations, where the goal is to preserve all the nutrients in the dish that normally get lost with heat. The salmon gets paired with lemon zest and fennel for pops of vibrance and sweetness that complement the fattiness of the fish, while the caviar adds as a seasoning instead of salt.
Why Tartare
There are proven benefits to eating a diet supplemented by raw nutrients, they do not lose nutritional value, especially phytonutrients, when exposed to heat. Which means your body absorbs more nutrients.
Tartares are a great way to get a really tender flavorful appetizer that can be made ahead and taste wonderful while being very healthy.

So seeing that I can’t eat everything I want anymore, I may as well write about it!
Hence this really cool tartare! Combining lemons and fennel with salmon make for really aromatic, light flavors that won’t overpower the fish. It perfumes it with a little sweetness from the fennel fronds. Also, this dish has no salt, instead, to compliment the flavor of the salmon, I’m using another fish product to season it.
Enter caviar!
It’s salty, briny texture is perfect for bringing out the sea in the fish. As you eat it, the little orbs burst with flavor seasoning every bite. And tying it together, dried seaweed sheets for crunch.
Which comes together as a really cool appetizer too for a party.

Description
This Salmon Tartare with Fennel and Caviar recipe is perfect for summer and inspired by raw preparations. Paired with lemon zest and fennel for vibrance.
Ingredients
8 oz fresh salmon– cut into small cubes 1/8 in thick.
1 tbsp Fennel fronds
Zest of one lemon
1 Tsp of Caviar
3 Sheets of Seaweed (nori) torn
1/2 haas avocadoĀ sliced thin
Instructions
Slice salmon into 1/8″ thick cubes, incorporate lemon fronds, lemon zest, and avocado. Add caviar and serve.
For an hors d’oeuvre:
Open a sheet of noriĀ and spoon a tablespoon of the mixture into it. Ready to serve.
For an appetizer:
Combine the fan avocado, mount the mixture onto the avocado on a plate, and break a few pieces of nori as a garnish.
