I almost feel guilty for featuring such a simple snack on the blog. These Spicy Chicken Lettuce Wraps are to die for though! Thai inspired and ultra flexible with the fillings! Beef, chicken, shrimp, and anything else you can throw at it.
Its basically a handheld flavor bomb of leftovers in a neat and really fast- I’m out the door and need food now!- kind of way. Want a taco but got no tortillas? This baby has your back. Cutting carbs and you get the gnawing hunger at the pit of your stomach? Say no more hungry stranger, this green caped chicken ensemble is here to save the day!
It takes less than five minutes to make, and it was a great use of my chicken breast leftovers from the night before. And sometimes, you feel like snaking without the health guilt trip or overly complicating things. I didnt even use a plate. Or utensils!
Just tear up the romaine lettuce and chicken into strips. If you have Sriracha or another chili sauce, it really pairs up well. (Lettuce is like 90% water) It cools you off as things start to get hot. The rest of the fillings are up to you and the contents of your fridge: tomatoes, Chinese white rice, ramen noodles, bean sprouts, cilantro, anything you can think of can fit in these health pockets of happy snacking goodness.
These days I’m handling a few more projects than I intended when I first started the blog. I’m very excited to do more popups as the we’re getting into November. Popups (Pop-up restaurant) is also known as a dining club; a way to get together and have an amazing dinner at someone’s house that you can’t get anywhere else. Ingredients
1 Chicken Breast: shredded
1 cup white rice
6 romaine lettuce leaves
1 tbsp Olive Oil
6 tbsp Sriracha or Thai Chili Sauce
6 Tbsp Honey
Instructions
Get lettuce leaves, and stuff them with anything and everything you want! Drizzle olive oil, hot sauce, and honey.
